Stuffed Peppers

2 cups cooked brown rice
1 cup minced veggies- whatever you have
½ cup firm tofu
1 tsp chili paste
1 tsp olive oil
2 tbsp rice vinegar
2 tbsp agave syrup
3 tbsp parsley, minced
Salt and pepper

Mix the oil, agave, vinegar, parsley, salt and pepper with the chili paste. Saute the tofu in the mixture. Diced. Combine the rice, veggies and tofu together and stuff the peppers. Top with panko. Bake 375 degrees 40 miniutes or until the peppers are plump and the panko is browned.
